If you know me, you know that in addition to a pint of beer, or a cocktail, or even a glass of wine… I drink a lot of sparkling water. Seriously…I put away a ton of sparkling water. I have this itching thing nagging inside my soul that craves someone to put the attention into soda and sparkling water that so many people have with booze.

That’s exactly what the idea behind Jukebox comes from. They call it a “sparkling beverage bar,” and I’m officially hooked on the idea.

The Origin Story

This has been a long labor of love from founder Jay Scherger. He started playing around with the idea all the way back in 2023, when the concept started getting tested around town at events like Findlay Market and Covington’s Oktoberfest. He started experimenting with different ingredients that can be added to sodas to kick things up a notch.

This is no different from the attention given to cocktails or coffee, just in a much more approachable way.

After a huge, successful test phase, their flagship location opened this last summer (June of 2025) in Deerfield Towne Center, and the ball is now rolling towards something that I hope spreads all around town.

What The Heck Is It?

Jukebox takes the personalities of a coffee shop, a juice bar, and a mom-and-pop bakery or ice cream shop and combines them into a place built for lovers of all things soda.

When you walk in, you place your order via either a QR Code or a pair of digital kiosks on one side of the room. There’s a big menu of pre-made ideas, or you can create your own – with everything from sparkling water to popular sodas and fruit smoothies available as a base to your drink. You can “dirty” it up with cream, you can add fresh fruits, candy, syrups… all sorts of stuff that elevates your drink to a wild new level.

The possibilities are pretty much endless, with the shop quoting something like 100 million different flavor combinations possible.

Here’s Why I’m Excited, And What I Hope For

I love this idea. As I mentioned before, I spend a LOT of time drinking sparkling water, and unfortunately, I’m doing most of that via cans of big brands. Finding places where I can stop in and get a sparkling drink that scratches the same itch that a great cocktail bar or taproom does changes the game completely.

With that, this one isn’t perfect, yet. The space doesn’t have the same vibes as my favorite bars do. It feels more like a space where I swing in to pick up a drink to go than it does one that invites community and creates a gathering spot. Maybe that’s part of the plan, but it isn’t what I’m hoping the concept does long term.

What do I want? I want a place like Jukebox that I can hang out in. I want a place that creates conversation. I want a bar with drinkers, all sitting around sipping on different concoctions, with bartenders whipping up new and creative innovations right in front of us.

We’re getting so close… and I’m pretty excited to see how people accept Jukebox, and how the brand can keep growing beyond where it is right now!

To experience Jukebox for yourself, you can visit their location at Deerfield Towne Center at 5859 Deerfield Blvd, and you definitely should!
