What better way to ring in the new year when you’re a brewery, than crafting a special bottle for a toast – just for the occasion? That’s exactly what the creative minds over at Braxton Labs have dreamed up for this year’s celebration, and on December 23rd, you’ll be able to snag a bottle of their dry hopped saison to ring in the new year exactly how any craft beer drinker wants to.
About The Beer
This Saison was dry hopped with Galaxy hops, and then bottle conditioned with Champagne yeast to bring the effervescence that makes for proper new year’s toasting. Bottled in 750ml corked bottles, this will even feel appropriate as midnight draws closer on the 31st.
This is the first bottle conditioned beer that Braxton has released, where instead of forcing CO2 beer before sealing it up the beer is given a precise amount of fermentable sugar and yeast while flat, allowing the beer to referment in the bottle, creating CO2 naturally that carbonates the beer. This process has the added benefit of creating a beer that is much more shelf stable, as the yeast will also consume any oxygen that is left in the bottle.
The beer itself is 5.3% ABV and 25 IBUs, a classic saison with only Pilsner malt and Saaz hops. The beer is earthy, phenolic and traditional… before being hit by the tropical Galaxy hops later in the process.
